Coconut Ember

Ingredients (1 serve):

• 60 ml vodka infused with Rumor Has It kit
• 30 ml coconut milk (full fat, well shaken)
• 15 ml freshly squeezed lime juice 
• 10 ml simple syrup (adjust to taste)
• Dash of vanilla extract (optional, for warmth)
• Ice
• Toasted coconut flakes to rim the glass
• Dried pineapple wheel for garnish

Instructions:

• Rim the glass with Toasted coconut flakes
• Add infused vodka, coconut milk, lime juice, simple syrup, and a dash of vanilla (if using) to a shaker without ice
• Dry shake (shake without ice) for 10 seconds to emulsify the coconut milk
• Add ice to the shaker and shake again until well chilled
• Fine strain into a rocks glass with a large ice cube
• Garnish with dried pineapple wheel
