Tequila Whiplash
Ingredients:
For the drink:
- 60 ml Tequila (silver or reposado) infused with Rumor Has It kit
- 6 chunks fresh pineapple
- Pulp from 1/2 passionfruit (or adjust to taste)
- 2–3 slices fresh jalapeño
- Tiny pinch sea salt
- 30 ml pineapple juice
- 30 ml fresh lime juice
- 15 ml triple sec
- Ice for shaking and serving
For the rim:
- 1 tsp sugar
- 1/2 tsp sea salt
- 1/4 tsp chili powder
- 1/4 tsp freshly cracked black pepper
- Lime wedge (to moisten rim)
Garnish:
- Pineapple chunk
- Pineapple leaf
Instructions:
- To rim the Glass, run a lime wedge around the rim of a rocks glass. Mix sugar, salt, chili powder, and black pepper on a small plate. Dip the moistened rim into the mixture. Set the glass aside.
- In a cocktail shaker, muddle pineapple chunks, passionfruit pulp, jalapeño slices, and a pinch of sea salt until the fruit is well broken down (about 20–30 seconds).
- Add tequila, pineapple juice, lime juice, and triple sec to the shaker. Fill with ice, secure the lid, and shake vigorously for about 15–20 seconds.
- Fill your prepared glass with fresh ice. Double strain the cocktail into the glass to remove pulp and jalapeño bits.
- Garnish with a pineapple chunk and a pineapple leaf. Serve immediately.
